I know, I know! I’m almost too late to the game with this corn soup. I almost missed corn season! What was I thinking? To be fair, I’ve had a lot going on in the Little White Apron kitchen this summer. So making it to the farmer’s market wasn’t high on the list of priorities. Now that things have (somewhat) calmed down, I’ll be doing a better job of making it to the market. Hopefully.
While I was at the farmer’s market I also found some great tomatoes, and fresh okra, both green and purple. Those will make excellent pickled okras for bloody Mary’s. I also picked up some local microgreens. Those are perfect for garnishing the soup and adding to salads. Plus, I’m supporting a local farmer.
