Depending on where you are, the tomatoes are either just hitting their peak or winding down. Around here it’s the end of the season. It’s been a good summer, filled with Caprese salads, bruschetta, pasta al pomodoro, BLTs and corn maque choux. But I needed a new idea. When my youngest daughter asked for tomato basil soup, I gladly complied….
Just because it’s summer, doesn’t mean schedules get any less hectic. So every now and then a slow cooker recipe that is both easy and delicious comes in very handy. This one fits the bill easily. If you’re not familiar with chicken tikka masala, think of it as Indian food for beginners. It’s spicy, but not in a heat-like way, in a spice way, but not overly so. Am I making any sense? It’s also wonderfully creamy and comforting….
We love pizza around here! We have it a lot. We’re not opposed to having someone deliver it, but when you can make your own, it’s so much better. First of all, you can use whatever ingredients you have on hand for toppings. I’ve made more than a few pizzas with some leftover grilled vegetables during the summer. Also in case you haven’t noticed, I’m a huge fan of SPICY! When I make my own sauce I can make it as spicy as I like. For this pizza I also added a little smoke in the form of a smoked mozzarella. Smoky, spicy and sausagey! What a combination! And we didn’t have to tip the delivery boy either….
